Leftovers from two dinners which I combined for today's lunch: baked sweet potato and blanched snowpeas and beans, with chicken and steamed broccoli.

My smugness about never using the vending machines at my former office may have been misguided. I've discovered it's much easier to ignore them when they are three floors away in an area I rarely visited, rather than my new office, where they are in the kitchen right next to where I fill my water bottle six times a day.

Still holding out, but it's taking more effort!

Tuna cakes. 2 cans tuna, 2 eggs, some minced garlic, and dried parsley. Fry it up in butter, top with pesto or hot sauce. (we did pesto tonight). Yummm.

Barbecued eggplant, asparagus, and lamb steaks, served with potato salad, and fresh tomato and avocado. Preserved lemon as a condiment.

Lemon jelly and vanilla ice cream for dessert.

Still cold quite often, even this deep into the NZ spring - but the BBQ has had a couple of nights on duty so far. So good for veges.

What is this word "recipe?"  I think I used homemade turkey stock, lots of leeks, lots of garlic, diced Yukon gold potatoes and some milk or sour cream, salt, pepper, maybe some thyme.  Blended a portion of it to get a creamy base, but left most of the potatoes and leeks whole so it was a chunkier soup.  Pressure canned 75 minutes at 10#.

A couple of weeks ago, I made a giant batch of red beans and rice, and just for great smartassery, added half a pound each of spinach and mushrooms. Still pulling servings out and eating them for work lunches. Om nom nom!

Deconstructed enchiladas.

I bought tortillas that were marked down and when I went to use them I realised they missed Jon Bon Jovi's rousing pep talk on "don't bend, don't break". These guys skipped bend, fold, roll and everything else, and went straight to break.

Instead of beautifully rolled enchiladas snuggled together in a pan, I ended up with chicken on a bed of tortilla shreds.

Tastes good, but I still have another packet of stubbornly inflexible tortillas at home...

I roasted a chicken tonight, along with potatoes and onions. I put fresh thyme and salt and pepper on it and olive oil. I cooked it long enough that it had really crispy skin. It was not fancy, but it was divine. There are leftovers, lots of them.

There are three more chickens in the freezer, two bought on some super sale this week along with tonight's.

A week after "food day" here at work, I'm STILL eating leftovers.

So the story goes, we had a food day last Wednesday (12/7).  The day after (Thursday), leftovers were brought out for people to eat at their leisure and someone left a loaf of French bread on the table.  Anyhow, it was untouched until yesterday (12/13) when  I noticed that it was starting to get a tiny mold spot.  Well, I decided to grab the loaf since I was pretty sure someone would throw it away if they saw that on there.

So, I've been eating it with cream cheese that was left on the table over the weekend but is still fine to me.  I had it for lunch yesterday and breakfast today.  Granted, I did remove the spots of mold on the bread.  I'll eat it till it's gone.

I just can't stand letting food go to waste.

I frequently freeze bread.  With a loaf of French bread, you could toss it in the over right out of the freezer and it's super toasty and delicious.

We had to pull our tomato plants early this year (we were going away), so I cooked up a huge batch of green tomatoes with discount jalapenos and salt, pureed the lot, and stuck it in the freezer in jars. Just used the first jar to make chili verde (caramelize some onions, add and cook down the puree, add a little water and cumin and whatever you want in it, simmer till done). It's ridiculously good, complex but clean-flavoured. And it was semi-free! Got another ten jars of the stuff. Mmmm.

Meatloaf made with lean ground pork. This is the first time in years that I have liked meatloaf.

I made it because I was too lazy to make the tourtiere I bought the pork for, and I had all the ingredients. That included opening a box of Panko crumbs that I've had for a year or two.
