Hey, fruit, nuts -- sounds like close to a balanced dinner to me!
We had some tomatoes that got banged around in my backpack a little yesterday coming home from the farmer's market, so I sliced them and tossed them into a bowl with some olive oil, a little salt, some sliced cucumbers, and a little red wine vinegar. Then I made smitten kitchen's lemon bars (crust is too thick for me, but they're delicious), a couscous salad with a curry vinaigrette and a ton of vegetables along with cashews and golden raisins, and a small batch of little salmon cakes (using canned salmon). Yum!
