There was little leftover pasta from two nights ago, and a yummy risotto from last night in the fridge. We had that for dinner* and there's just enough risotto left for my lunch tomorrow. Easy button for the win.
BTW, when I made the risotto, I didn't have a lot of time, so I turned the flame much higher than I normally would and it worked amazingly well. Game changer! I love risotto because I can add tons of veggies which means I don't have to make a salad. Last night's version had onions, shallots, mushrooms, peas, sun dried tomatoes, kalamata olives and feta. Yum! Now that I've figured out how to cook it faster, it's going to go into regular rotation.
* I just realized that sounds kinda gross. DSS ate the pasta and DH and I had the risotto.
