We spent part of the week staying at a VRBO with only a 2-burner induction cooktop, and 5 hungry people. That was interesting...
(We took cooked shredded beef, corn tortillas, shredded cheese, avocado, cabbage & carrots & vinegar for mexican slaw, and had tacos the first night. We swung by a grocery store and had rice noodles with veg and chicken in peanut sauce the second night, with cobbled-together peanut sauce. We went out for mexican the third night.)
Last night: Caldo tlalpeno, i.e. chipotle-flavored chicken-and-vegetable soup, served with cilantro, mild cheese, more chipotles, salsa, pickled red onions, and salad (the salad was not meant to go into the soup, but everything else was). Would recommend.
Tonight: Salmon, with asparagus and ... I dunno, probably rice?
