Tonight is going to be a trial run for tomorrow's dinner, as I'm doing roast beef in the Instant Pot for the first time, and don't particularly want that going badly on Xmas Day.

Ham glazed with a blackberry-mustard sauce, my grandma's potato casserole, and a big plate of cookies and fruitcake for Christmas Eve dinner. Mom added roasted carrots and a big veggie salad. SO full.

Husband and I are both sick which means no pilfering from my mom's holiday cooking and no stores are open so it's time to scrounge in the cabinets for dinner. I think I have almost everything for  keema chana masala, at least I hope I do because now I have my heart set on it!

We’ve already had fruitcake, tamales, and Bloody Mary cocktails for Christmas brunch, so I don’t know if we’ll want to bother with the planned crab cakes for dinner. We might end up with leftover ham and eggs, and I would be totally fine with that.

after eating only cookies and drinking only whiskey aged eggnog yesterday, today I am looking forward to my landlords cooking a delicious Christmas dinner of Steak, roasted broccoli, au gratin potatoes, and we are having tiramisu (homemade by me!) for desert. Yum!

Since it’s just DH and me tonight, we’re having steelhead trout in teriyaki sauce, baby bok choy, rice and homemade bread. Tomorrow is the big Christmas family dinner - roast beef, potatoes, carrots, salad, buns and a yummy-looking sticky toffee cake we picked up at Costco.

Liver & Onions.  1) soak calves liver in some milk.  2) chop up some bacon, onions, & mushrooms.  3) saute.  4) add the liver, do not overcook for the love of all that is holy!  5) enjoy.

I cooked the shrimp on the stovetop, but otherwise mostly followed the recipe. It was pretty fantastic!

Tonight’s dinner was sushi at a good, locally owned, reasonably priced restaurant ($36 for both of us) because today’s work schedules were crazy and we hadn’t had sushi in a LONG time. It was a wonderful treat. Last night we had baked salmon fillets and zoodles (spiralized zucchini “noodles” sautéed with olive oil and garlic).

Last night/all day ... had a beef roast going in the slow cooker. Made scalloped potatoes and ham for a side and steamed broccoli.

Eating leftover beef and macaroni. This batch cost $5.27, fed four of us with a salad added, and there were plenty of leftovers.

This is our traditional New Year's Eve dinner, but with chocolate fondue for dessert. And an assortment of salads (I have to look through the fridge, but we'll at least have a green salad and a salad of thinly sliced fennel. And probably another vegetable, too.)

We were originally planning to make crab cakes tonight, but both husband and I are working today so dinner might be something simpler. I do have breakfast sausage and we haven't had pancakes in ages, so that might be fun.

My Christmas Eve fondue didn't turn out great. It tasted fine, but the cheese never fully integrated into the wine and it was kind of soupy. Still delicious though, and we ate all of it. @jeninco I hope yours turns out great!

We’ve been eating roast beef leftovers since having it as our family Christmas meal on Dec 26; we’ve prepared it in a variety of ways, such as fajitas, beef & broccoli stir fry, and hot beef & gravy open-face sandwiches. Tonight we’re using up the last of it - beef and barley soup that’s in the slow cooker.

Ha, we're on the same meal plan as you, just a few days later. Tomorrow will be lentil soup (I don't actually like black-eyed peas -- I tried for years, but lentil soup is our compromise between things that are traditional and things that are yummy.)

Tonight we are having corned beef, cabbage, blackeyed peas, and cornbread. I got the best price on corned beef in the past five years at $2.99 a pound. My going meatless idea was shut down, lol.

Last night was kinda a mixed bag to use up what we had.
Made some butternut Squash soup with just the DW and myself would eat, kids wanted no part of it.
Made eggs to order and hashbrowns and toast
And we wiped out the rest of a Macaroni Pasta salad so fridge is cleaned out a bit

Coming back to say that recipe was freakin' fantastic (and quite straightforward), and dinner was delicious. We had falafel, pitas, hummus, zhoug, lettuce, a few grape tomatoes, and a salad of thinly sliced cucumbers with yogurt. As one of the kids pointed out, it was fairly inexpensive and both fun and yummy.

Making shepherd's pie tonight, with a platter of raw veggies and dip for everyone to pick at along with it.  We'll have the leftovers tomorrow, which is great because we get home late from a kid activity on Friday evenings.  This morning I made a delicious Copycat Starbucks Lemon Loaf, which we had with fruit.  This will be our breakfast the next couple days too.  Yum!!!

Last night was Mexican night. Build you own Burritos or Tacos with White rice, chicken , beef, tomatos, lettuce, black olives, black beans, refried beans, cheese, etc.. etc... and then self made nacho's the way you like on the side.

Homemade cauliflower/potato/cheddar soup.  Used up a cauliflower that was past its prime, and also made garlic toast from some buns that were going stale.

Tonight was a "clear the freezer" meal.
-Costco salmon fillets topped with the marinade from a Barefoot Contessa recipe (Asian Grilled Salmon) and baked
-A half-bag of frozen green beans sauteed in a combo of soy sauce, garlic, Sriracha, and sesame oil (still trying to replicate an incredible side dish from a restaurant meal years ago)
-A half-bag of southern-style hash browns tossed with oil, salt, pepper, and garlic powder and baked for oven fries (too much rice lately)

spiralized a zucchini that was on it's last leg, sautéed it up with some pesto, and topped with a salmon burger from the freezer. I've had this meal at least 5 times in the past 2 weeks. So good
