The kid has soccer practice tonight, so the plan right now is for wraps with sweet potatoes, hummus, bell pepper, and spinach.  Quick and easy for the win.

Last night: https://smittenkitchen.com/2014/02/stuck-pot-rice-with-lentils-and-yogurt/ with several salads (one of roasted beets with chopped parsley in a red-wine vinagrette, one of shredded carrots with a parsley and lemon dressing, and some cut up cherry tomatoes.) in which I discovered that the yogurt I made a few days ago never set: aargh! (I'll use it in smoothies over the next few days, I guess. Or pour it over granola.)

Tonight: grilled pork chops with mustard, slow-cooked red cabbage, and roasted sweet potatoes. Perhaps green salad, too. Also, we have homemade sauerkraut hanging out in the fridge waiting to be consumed...

Chicken fettuccine Alfredo was made for first supper with my daughter. Two freezer portions were created. Pasta fagioli soup and salad will be second supper with my husband, and two freezer portions will be created. I’m working on building back up my freezer meals stock!

Chicken breast with Korean spices, baby bok choi on a bed of rice that was sautéed with onion and peas (the rice was already prepared and frozen), this was drizzled with some satay sauce and topped with some chopped cashews.  Fast, easy and delish.

Apparently I need to check my oven temp, but other than not really browning nicely, it was delicious.

Last night, we had homemade pizza and salad.

Tomorrow -- got me: I have a full day of ski patrolling + driving in the snow, so whatever the Mr. decides to prepare.

An asian hot & sour pork loin stew for two.

1.  heat 1 quart water with beef bullion (we use better-than-bullion).  Also add a little soy sauce.
2.  add 2 tbsp of homemade hot & sour -- bunch of homegrown thai chiles from last year marinaded in white vinegar
3.  add some frozen peas and minced celery -- or whatever spare veggies we have on hand currently.
4.  once simmering rapidly, turn off and then add in thinly sliced pork loin (1/2 pound -- we buy whole bonless pork loin from Sam's at $1.68/lb and slice it thinly into 1/2 pound portions.)
5.  also add in cilantro and lime juice and minced scallions -- we grow the scallions out back year round. (We also grow cilantro but it died this winter, so had to buy from store.)

Salt and pepper to taste.

Kind of a pho like flavor but quick and easy to make and with pork loin instead of expensive beef.  Tastes absolutely divine :)

@OtherJen - that breakfast sounds delicious. My teens are rarely up early enough to make breakfast a worthwhile thing, but I'll have to give that a shot at some point.

My pattern seems to be:  Make a bunch of stuff from scratch for 1 week when my daughter is with me, and then eat all of it as leftovers the next week when I am alone.  Pretty efficient, actually!

Loaded fries. Air-fried potato wedges topped with chicken breast, steamed broccoli, cheddar, and a bit of crumbled bacon.

We've hit the peak cabin fever/seasonal depression point of winter, and this was the only thing that sounded good that I had the motivation to prepare.

Pulled some leftover lentil taco filling out of the freezer. We're in full on weird weather spring here; it was 76 on Monday and is supposed to snow on Saturday.

We had only one eggplant, not enough to make a whole eggplant parmesan, but I sliced two zucchini, salted and breaded them like the eggplant, and the results were delicious.

We had two, and made the Smitten Kitchen stuffed eggplant parmigiana.  (it was absolutely delicious, and no frying involved.)

Tonight, we're having beef heart (probably flash fried in loads of butter: it's marinating now, but that stuff is absolutely lean) roasted Brussels sprouts, and probably garlic bread.

Modified colcannon (I prefer to use sharp cheddar as glue, rather than butter) with a small amount of grilled sausage. (Kielbasa, because that's what was in the freezer when I went to look.) We'll split a Guinness if we have one, as an appetizer.

Unfortunately I overcooked the rest of the pound of dried chickpeas so while they'll be fine in hummus they won't be fine in other dishes and I was hoping to make fake tuna salad for sandwiches. Oh well. My first time cooking from dried in the pressure cooker.

I’ve been trying to up my cooking game while increasing meal planning and reducing food waste.  I am also dusting off my cookbook collection.  This week is Mediterranean week so tonight’s fare was a shawarma chicken plate with mint tahini yoghurt sauce, hummus and Greek salad.  Hummus and the salad were made on the weekend and I have been enjoying them all week.  I have leftovers for lunch tomorrow and another two meals worth of chicken now in the freezer.  All recipes from Milk Street Tuesday Nights Mediterranean cookbook that I got in the bargain bin.  So far, so good, that book is a keeper.

Bao buns with bbq pulled pork.

Gotta give credit to my friend for his bbq pork recipe. Mix every sauce you have together and throw in the pork.

Was accompanied with pickled carrots with ginger, cucumber and sesame seed salad, and steamed pak choi.

We've been trying to eat a bit less meat, so:
Kid picked up fresh corn tortillas from the tortillarilla that's not really close, so we had cauliflower tacos with black beans the first night (with various salsas and quick-pickled things, and slaw)
a NYTimes red bean curry thing the next night (with a big salad and rice)
mushroom tacos last night, with the remaining tortillas and black beans, and various other veg things and salsa

Tonight: beef stew, with Brussels sprouts and mashed potatoes (the stew will contain carrots and onions at least, to stretch it out some).

tomorrow (possibly): the Mr. has expressed an interest in making fresh pasta, and if he does we'll have it with a cool fast Kale sauce where you blanch the kale and then run it through a kitchen tool to make it into a smooth paste with some garlic and warm. Probably served with finely cubed provolone or bits of fresh mozzarella, because it's a pretty spartan dish otherwise.
