I got the urge to make a spice cake from a box mix that I got early on in the pandemic….so tonight’s dinner is cake :)

I had a late lunch of avo toast (made with yesterday’s homemade oatmeal bread) with poke salmon.  It was delicious.

We had a red curry coconut soup that we started with sauteeing garlic and shallot and also a pint of cherry tomatoes, which was a fun and unusual taste/texture to add.  The recipe we looked at also had us adding scoops of silken tofu to the bowls along with large handfuls of mixed herbs, so each bite was full of different but bright and fresh flavors.

Served with sweet potato fries.

Bratwurst and sauerkraut from a polish deli near where we camped a few months ago. We threw some of their victuals in the freezer, and we're grilling them tonight.

Meal prepped for this week. Not really “dinner” but two of my meals for the day:

4oz of braised shredded chicken; 1c roasted broccoli; 1 serving of Trader Joe’s brown rice medley (ft. sazón).

4oz of braised shredded chicken; 3oz of sweet potato; .5oz of walnuts.

Breakfast is 1 serving of oats, 2tsp truvia brown sugar, .5tbsp of almond butter + 4 egg whites.

Dinners will be tofu/pasta/something warm that fits my macros.

Protein shake and half a banana for snacks; cottage cheese before bed.

Whole day of eating is ~1750 cal, 168g protein, 144 carbs, 48 fat.

Passionfruit pudding cake for dessert.  Was supposed to be our Valentine's Day dessert, but we were so bereft with no dessert last night we just can't wait till tomorrow to make it.

DH birthday today! Margaritas with homemade guac, to be followed by ranchero shrimp over rice and a homemade key lime pie for dessert.

Lots of "went to the store just to buy" items on tonight's menu, but it's worth it.

I think tonight is going to be some keema and while I'm browning the ground beef I'll go ahead and do enough to make vegetable beef stew in the crockpot for tomorrow.  I ended up getting about twice as much ground beef as I'd ordered since the 1 lb packages were out of stock, so that was a nice score.  I may go ahead and brown all of it and put half in the freezer as a shortcut for some other meal.  On the other hand, I only got about half as much vegetable juice as I'd ordered, so I'm hoping I've got a couple of cans of V8 floating around to do the soup with.

Cincinnati chili - 5 ways.  Very excited for tonight, as we don't make this very often since we're mostly meatless.  Probably just with a salad so lettuce doesn't go bad.

Passion fruit pudding cake leftovers for dessert.  Turns out I don't love pudding cakes.  It just feels like it didn't get done cooking?

And we'll have a special Valentine's Day cocktail before the meal.  A Guadalajara Sour (it's just tequila, lemon juice, simple syrup and chilled rose as a sort of floater).

You can do a pretty good job of Cincinnati-style chili using ground turkey or tofu/soy crumbles. I literally don't remember the last time I made it with beef - maybe a decade ago.

We should try this for sure.  I actually really, really like the real meat (and we use half beef, half lamb) but I think Cincinnati chili is fun enough that I would be happy to do it more often even if we used meat substitutes, so it's a good idea!

We had edamame and homemade sushi rolls with smoked salmon on Tuesday, and steak and shrimp with a big salad last night (February is the worst month so we try to eat fun things).

We're under a winter storm warning today, so I think I'll make stock out of the bones from a roast chicken, cook up some white beans, and make white chili with chicken.

The storm has come and gone here (somewhere around 8 inches of lovely light snow last night, boomer sunshine today!) and I'm back at home after doing elder care for the past 2 weeks. We're having Louisiana style red beans and rice with sautéed spinach.

Beef lettuce wraps. Only with lentils instead of ground beef. This is fast becoming my favorite pantry staple (those lentils - either French ones or pardina) as the texture is amazing and subs just about perfectly in dishes that aren't hamburger patties.

A work function this afternoon from 4pm until 6pm.  There will be food and drinks, so dinner will be late and light.  Probably nachos with some reheated chilli beans we made a couple of weeks ago and froze.

There are many reasons to sous vide, but changing the flavour of your food isn’t really one of them so I don’t expect you will have been impressed if that is what you were after.  Personally I love to use my sous vide for steaks, I can get a perfect for me cook with zero effort, and a lesser cut of meat can be as tender as tenderloin.

I had a hankering for Indian food so I got out the Instant Pot and got cooking.  I made chicken biryani, palak paneer and butter chicken.  I had naan on the side, and now have six future Indian meals waiting for me in the freezer.  I had plans for Chana masala, but ran out of steam, so that will have to wait for next weekend. 

The Instant Pot is the bomb for Indian food. 

I also made a big crock pot full of caramelize onions.  I think I got the idea from somewhere on this forum.  They turned out great, I am excited to have it at the ready in the freezer for future burger garnish and soups.

Corn tortillas, seasoned beef, beans, cheese. Top with green sauce, bake until it's hot and bubbly.

I do, often. We use enchilada sauce and call it Enchilasagna! Lasagne is the way to go.

I have a 5:30 pm meeting today and will grocery shop after that. Right now, it looks like rotisserie chicken (unless the store is sold out), green salad, and maybe microwaved baked potatoes or yams.

I’m not making anything lately, bc I jacked up my knee skiing. My church has covered three meals this week and while it’s frustrating to be injured, it’s lovely to be reminded of the gifts of friends when you are.
