I served up some leftover pulled pork with some fresh rice cooked up in my rice cooker and served it with a very simple salad of lettuce from my indoor garden and tomato with a simple oil and balsamic vinegar dressing.

Food of the gods - baked beans.


4 cups dry Navy beans
1/2 cup maple syrup
1/2 cup molasses
1/2 cup smoky BBQ sauce
1/2 lb chopped bacon
2 onions, coarsely chopped
1 tbs dijon mustard
pinch of cayenne pepper (if you want a little heat)
pepper to taste

Cook the Navy beans about 3/4rs of the way through so they're still a little hard, then throw them in a crockpot with the above ingredients and maybe a cup of water.  Cook on low for 8 - 12 hrs.

We tried a new spaghetti squash recipe tonight. With a creamy cheesy pesto sauce topped with walnuts with brown butter and sage. It was a nice change of pace!  Served with salad.

Chicken nuggets, fries and onion rings (all store bought processed food, but at least we baked them in the oven and didn't fry them)

Snack tonight will be cut up orange and celery to make up for eating junk food for dinner.  ;)

Roast lamb.  Although I think it was hogget.  Lamb is up to 18 months old.  Hogget is 18 to 30 months old.  Hogget tastes better, so we were happy.

Now we have left overs for lunches and for wraps for the next week.

Interesting! I just picked up a lamb a little older than they are usually butchered and DH asked if it could still be considered lamb. I thought yes, because it was still under a year old, but now I have a better answer.

Tonight we're having pan-fried cube steaks, and I think I'll serve them with leftover chicken gravy with sauteed mushrooms added, and a big tray of air-fried broccoli.

The stromboli looks so good, I might have to make up a low-carb version of that this weekend with the GnomGom crazy dough.

I cleaned the freezer and fridge yesterday.  Tonight is freezer thawed shepherds pie for the meat lovers and leftover veggie chili for the vegan.

I made this tonight and it came out really good! It isn't for dinner but could be. I am going to have it for breakfast! I didn't make it exactly like this lady but I think you can add or delete certain things to your own taste! I made two sheet pans full and cut them into 8 pieces. Have eaten some of the edges and it is really good! Tomorrow we will eat a hunk each for breakfast! It could be cut in smaller pieces but I kind of did what the lady in the video did. I doubled the recipe and cooked on two sheet pans.

This video is not in english but I took notes and wrote down the recipe as she demonstrated it. I am so glad I did. This recipe can really be jazzed up with meat, mushrooms, different veggies.

I love pizza and this reminds me of it a bit! The next time I may make it more Italian! I did use Italian spices, crushed red pepper and garlic powder.

Mark Bittman's "Cassoulet with many vegetables", which is pretty far from being cassoulet, but was a giant casserole of leeks, onions, carrots, celery, crushed tomatoes, giant white beans, 12 oz trader joe's "Andouille" sausage, and some leftover roast pork (with the pork fat). shredded cabbage is added 2 minutes before serving.

We had it with warmed bread -- we've been making our own sourdough-dish mostly-whole wheat bread european-style crusty boules for months, and they're getting pretty good.

It was good and easy. I advise checking the heat level before adding the sriracha, depending on how spicy your curry powder is. Ours is pretty hot, so we didn't need to add any sriracha.

Just an update on this recipe. Had it for breakfast yesterday and it was really good. Warmed it up in the air fryer and after splashed some Cholula hot sauce on it. Tasty! This is a good way to use up veggies and eggs. I usually buy 3 dozen eggs at a time and they last us 3-4 weeks and other times, we don't use as many and I have to find ways to use them up. I doubled the batch so that used up 8 eggs.

Tomorrow will be salad again, and I'm thinking chicken breast stuffed with brie and prosciutto, maybe smothered with shallots and pesto because it's fun to be fancy on Monday night.

Linguine with clam sauce?  The clam sauce is from a can I purchased from the discount rack at the grocery store.  I noticed that it just passed its expiration date, so time to use it before I have to toss it (assuming it smells okay).  I've never had a can of clam sauce, so I'm not expecting much, except a cheap meal.  Will eat with a salad.
