As long as I can wait until the day of Halloween to carve my pumpkin (or the night before and store it in the fridge), I do cook and eat the pumpkin. I figure that since it only sits outside for a couple of hours, and it's too cold for bugs, and then I cook it for quite a while, there's no problem. You do have to watch out for spilled wax though!
