Hmm, tough one...
George Carlin or Robin Wlliams or Richard Pryor - comedy geniuses. I wouldn't expect to be entertained per se, but their intellects and life stories are impressive. Being able to get millions of people to laugh - wow!

I would be very happy to have one more day to spend with my mother. She died in April.

I can't think of anyone off the top of my head, but subscribing cause I'm sure wisdom of the Mustachian crowd will have some cool answers.
I am a former teacher who accumulated a bunch of real estate, retired at 29, spent some time traveling the world full time and am now settled with three kids.

All the people that come to mind tell me that it would be with selfish motive. I would boor Paul McCartney to tears with Beatles questions. I would wear myself out trying to get an honest answer out of the Bush 43 administration. And there are many more. In every case, it would be best if I just stay with my current ignorance.

Since Frank Kermode has passed away, it would have to be Harold Bloom, to discuss literature.

An Amish family.

Come to the Upper Midwest!  You can easily hang with them here.  They'll put you to work.  An Amish man built the kitchen cabinets in our house twenty years ago.  Beautiful stuff.  But now he's busy building cabinets for luxury condos in Milwaukee and Chicago (they come to him).

Unfortunately I'm English so that would be a hell of a trip to make for one day! I watched a documentary once about four English teenagers who lived with various Amish families for a week or so - totally integrated with the clothes, the schedule, the work, trying to live the values... I would love to do that.

Wendell Berry-- because I think he is one of the best essayists and thinkers living today--or go on a sufferfest with Alex Honnold and Cedar Wright because it looks completely epic, I don't have anyone who would do that with me, and Alex is both the best at what he does and really freakin' mustachian.

My favourite author - Lois Mcmaster Bujold.
Or failing that, the flight controllers at NASA. i read the work of one guy (Robert Frost) a lot, and he makes the science interesting and approachable.

Great minds think alike! Of course my response, as a woman, might be for different reasons :-)! I always figure a guy like Mike Rowe who seems fun and interesting and very non-snooty (although a bit sooty!) would be fun to spend a day with.

yea...i had a sneaking suspicion that you may have had an ulterior motive :)

but he seems cool as shit. very intelligence and is a fan of hard work...and i find him hilarious. would be cool to have a beer with him.

check out frank howarth. he is a woodworker but does some really cool stop motion videography. I love watching his turning videos.

Without a doubt Stephen Hawking. Geeky I know, but if you love learning about the Universe as much as I do, you would understand.

Choose to have them hang out with each other and then pull up a chair and watch.

If you make them a group, then you follow OP's rules.

Anyone living or dead?  Warren Buffett, Abigail Adams, Jacques Pepin...

I almost fear meeting my heroes, though.  I think that I may be disappointed.  Is it just easier to admire them from afar?

I still have crazy crushes on some musicians and think it would be fun to be in their orbit for a few hours... until I figure out that they're actually boring and narcissistic... Haha.  Maybe it's better just to foster the illusion.
