I've done this before but with root vegetables. I might like lettuce better.

My mother in law is currently trying this with celery and has had very little growth in the month that it has been on the window sill. However, I don't think she's been disciplined enough to change the water on a regular basis. I may give it a shot over the summer (no good sunny spot in my current apartment).

Works very very well with green onions. I bought more green onions that I could use on sale one time about six years ago, and planted them in a little pot on the windowsill. We clipped the tops off and used them in our cooking for about two years until they started to look kinda raggedy and needed repotting . . . at which point I stuck them in our garden. Long story short, the onions went to seed, and we have had a very hardy green onion patch in one end of our garden for several years now. Actually, they've spread into some areas of our lawn . . . which makes for some odd onion-y smells while mowing, but otherwise looks nice and green!

You can accelerate root growth by mashing up a little new growth (bright yellow thin part) from a willow branch into the water you use. Willows have a bunch of natural root growth hormone in them (which is why it's so easy to grow new willows from cuttings).
