Dukakis turkey soup

Mike Dukakis put out the call for neighbors' turkey carcasses so he could freeze and enjoy turkey soup all year. Also mentions how when he traveled for Thanksgiving, he'd take the carcasses home with him. Prevents waste and sounds delicious. He rocks!

In my family, we actually call it by the full inglorious name, "Turkey Carcass Soup."  Everyone's got their own version, some use wild rice, some skip the rice and steam dumplings on the top at the end, some finish with with cream/milk, and so forth.  This Thanksgiving my husband and I ate ours four days straight until it was gone... he believes it's not quite as good out of the freezer.  Every time there's a turkey, there's turkey carcass soup.  Next opportunity, Christmas!
