This guy has many other guitars, but a stellar performance on a 3-string shovel guitar is a good example of how you can be happy with less:  Crankin' Up the 3-String Shovel Guitar!.

That's awesome!  Several years ago, I bought/sold a bunch of guitars because I thought that was part of guitar playing.  (Sigh...)  I finally realized that I sounded exactly the same on every single one, and I should probably spend more time - and less money - actually playing.  So I sold all but one.  Had I known about this, I'd have sold that one too and just kept a shovel, but hindsight is always 20-20.
