Have one email account that you protect very well with 2FA and a solid unique password.
Not a bad way to go. I'd only add to make sure any recovery mechanism is also secure. If you use another email address as your recovery email, then make sure that email is also properly secured. Same if you use a phone number as your recovery mechanism. Make sure that account uses 2FA and has a strong password. As always look for the weak link. Your recovery mechanism is essentially a backdoor into your email account.
And I don't think I'm overthinking. You should know how your money is protected.
