What to do with extra lemon juice?

With a heat wave in town, I picked some lemons off the tree and made some fresh lemonade.

I was a little overzealous on my picking, and ended up with too much lemon juice.  I also ran out of sugar, and don't expect to make an extra trip to the store for it this week.

What can I do with the extra lemon juice?  Would it freeze well?

I freeze it in an ice cube tray and put the tray or the individual cubes in a sealed bag to prevent evaporation.  Most of the fruit on my lemon tree ripens in the winter, so it's necessary to do this to avoid wasting the juice.  The frozen juice should keep at least two or three months.

I also freeze lemon slices as those are great to use in place of ice cubes in drinks.

Lemon juice is great in a barbecue sauce or rub.

I freeze my lemon juice in ice cube trays also, and pop them in gallon ziplocks.  Then I use it to make salad dressing, with balsamic vinegar, olive oil and herbs.  Other people make lemon curd or lemon pie or lemon bread.  I'm almost out of frozen juice and waiting for my lemons to ripen later on this year.

please let me know how this turns out!

My suggestions:
lemon sorbet
freeze in ice-cube tray (as suggested by someone else)
mix with vodka and sugar and lemon peel to make lemondrops/lemon martinis/lemon whateveryouwantto call it.  Actually, I'd prefer a Lynchburg Lemonade
make lemon chicken (marinate chicken in mixture of olive oil, salt, pepper and lemon juice - then grill in a pan.  at the end add 1/4 cup lemon juice, 1/4 cup broth, tablespoon of brown sugar.  thicken with corn starch and toss chicken to coat).
lemon squares!.. or lemon meringue pie

Excellent idea!  Unfortunately, my carboys are all in use with a Merlot and a few meads my dad is making.  I imagine this would need to be diluted significantly due to the acidity.  I'll have to research this for a future date. 

I think I will freeze for now and re-evaluate in the next few weeks as I have time to think about it.

Lemon wine is fabulous! Just bottled a 5 gallon batch this week. It is great by itself but also mixes well with other wines to give them a total different taste.

I would definitely freeze it to ice cubes or make lemon bars with them. They would make a great addition to any drink as ice or make ice.

never thought of ice cube trays but i have little tupperware dishes i'll put a half cup into and freeze.  i always get more juice than i need for what ever i'm making.  I do the same with excess beef broth and chicken broth.  Buy the big container and freeze half cups/1 cup lots of it and grab it for what ever recipe i need it.  less waste
