What can I do with my bread dough that I forgot about?
« on: October 15, 2014, 11:15:36 AM »
I started to make bread today, but I got distracted and forgot about it. By the time I came back to it several hours later, it had overrisen and collapsed. I don't want to just throw it away, but an not sure what to do with it. Maybe dry-fry it like chapattis or roll it out and oil it like a very dense foccacia?

I flatten it with a rolling pin and heat on stove.  It makes decent pita bread.

I believe it would be fine to punch down, reshape, and let rise again.

What Geekette said. But be ready for lots of big bubbles in the bread from the over proofed dough. And sometimes it has a bit of a yeasty taste. Still edible though.

+1

Some breads - like ciabatta are actually made this way (the really big holes are a feature of this) - and since ciabatta is currently popular, you can just say it was meant to be that way.

I rolled it out super thin, cut it into squares and made sort of bready crackers. But I was convinced it would never rise again - I might try punching it down next time (though hopefully there won't be a next time!).

Wow, a phone plan for fifteen bucks!
