Removing pocket doors and framing for new doors

Our house has some great old solid doors, but unfortunately the upstairs has 3 doors which are pocket doors.  They aren't even the nice, solid pocket doors.  These are crappy, hollow core pocket doors.  There's no benefit to having pocket doors in these locations either. 

We found 3 door slabs, that match the style of our other doors, at a building material salvage store.  My plan is to remove the pocket doors, frame out the openings, and hang the new/old doors. 

I'm fairly comfortable with the concepts/approach to framing a rough opening and hanging the doors, but I was wondering if anyone had done this before and had any watch-outs, tips/tricks to consider.

Just make sure they swing the right way and put them in the best location.  The current framing for the pocket door is about twice the width of the opening, so you can put your new door anywhere in that space if you're willing to do a little wall repair.  Consider where you're putting furniture and which door location/swing facilitates the most and best options.

Pocket doors are funny, sometimes they're great and other times a PITA.

Could be really great, since you have a lot of options with placement and then there's extra space for things like built-in shelves etc.

With a pocket-door frame, the r.o. height is also extra tall, so you'll have to frame it down some as well.  You may be able to reuse some of the trim, but not the split jamb obviously.
