Ideas/resources for upholstering/padding?

I've never done the slightest kind of upholstering, so I may be asking daft questions.

I have a cool old trash-picked office chair but the padding on the seat is really flat and worn out. My biggest question is, what characteristics should I be looking for in replacement padding? If I bought something, what would I buy? If I wanted to upcycle something, what are some examples of things that would work?

And then my other question is if anybody knows of any websites or tutorials about upholstering things. I think basically I would carefully remove the fabric cover enough to remove the old padding, stuff in the new stuff, staple the fabric back onto the underside of the seat.

I've seen a bunch of her videos, and highly recommend them--they're very clear, and easy to follow.
