DIY Quartz Breakfast Bar Bracket Placement

Thanks in advance for any advice you can provide. I'm an amateur home improvement DIY'er so sorry if I get any nomenclature wrong here.

I am installing steel braced brackets for a quartz breakfast bar in my kitchen. The size of the quartz piece is approx 52"x18". 

I ordered the brackets and they look good. My issue is the spacing of the studs where I'm planning on attaching them.  The space between studs is 16", so it will look something like this:

I--10 inches--IBracketI---16 inches---IBracketI---16 inches---IBracketI--10 inches--I

The manufacturers instructions say that there should be only 4 inches of overhang, but I'm at 10 on each side.

Is there something I could add, maybe like a wood ledger along the wall or do I need to totally reconsider the project?

Consider over sizing your three brackets, use some drywall anchors for the other two brackets where no stud.

Put two table legs with the three brackets.
