Title: Covered porch material

A few years ago I built a wooden deck off the back of our house which is pier and beam construction. I built the deck with the plan to add a covered porch in the future which is now. I curious what people's thoughts are on porch covering material. I've placed my rafters at 16" centers and have about a 1.2:12 pitch. Overall porch coverage is roughly 8'x16' Should I use corrugated material, treated plywood, other?

That is a very flat pitch.  The only roofing that will perform on a roof that flat is some type of single ply material such as EPDM rubber, or a good metal roof.   If the high side is connected to your house, extreme attention and detail needs to be paid to how this is tied together and flashed.
