Roasted two bpvery large sweet potatoes that seemed to be approaching their 'best by' date (peel, dice, toss with olive oil, cumin, sage, cardamom, celery salt, salt, and minced garlic).
Made pinto beans and rice, using red pepper that has seen better days (dried pinto beans, basmati rice, salt, garlic, celery, red pepper, leeks, cumin)
Topped beans and rice with some of the roasted sweet potatoes - pretty yummy!
