What are you eating this week? Or what did you eat last week? Bonus points for recipe links (bonus points may be redeemed for cat pictures by going to this link and typing in the redemption code "CATS"). I'm working on doing a larger scale meal planning session to tackle five weeks in a row so I'd love to hear what other people are eating so I can steal your ideas we can make an epic thread. It started as a way to combat the nightly battle with "There's no food in the fridge, only ingredients!" and having unused ingredients spoil. With the division of labor in our house I only cook four nights a week, so the "weeks" below only show four dinners.

Here's my most recent round of planning:
Stir fry with peanut sauce, rice
Chicken Cordon Bleu casserole, green beans
Mushroom Pasta with peas, spinach, white beans
Honey Seasame pork slow cooker (pork instead of the chicken in the recipe to change things up a bit as my recipes tend to feature chicken a LOT)

Oven-fried chicken, mashed potatoes, roasted vegetables
Chicken Florentine Pasta, salad
Chili over noodles
Chicken and wild rice (slow cooker) with salad

Maple glazed chicken with rosemary roasted potatoes, carrots, parsnips   
Spinach bacon pasta
Broccoli Cheese Quiche
Chicken Hawaii (slow cooker) white rice, fruit salad

Paprika chicken over couscous with onions/parsnips/carrots/rutabega
One pot red pepper pasta
Balsamic Pork Chops (oven) over diced Gala apples, green beans, rolls
Coq au vin (slow cooker)

Orange chicken rice bowl
Lemon pepper chicken with orzo
Spanish chickpeas and rice
Apple cider pulled pork, rolls, green beans

Last week was grilled chicken, pork spareribs, Mexican rice, sweet potato hash, grilled squash, and green beans.

This week we have grilled pork, roasted chicken (some curry, some lemon pepper, some chipotle), Mexican rice, sweet potato hash, roasted broccoli and cauliflower, caramelized onions and peppers, and baked squash with mushrooms and tomatoes.

Each weekend me make a couple meats, a couple starches, and a couple veggies. We then combine 1 from each into each meal. Easy peasy.

My meal prep may sound boring, but here's what's for lunch this week

Yesterday I prepared:

93-7 Lean ground beef patties from Walmart. Seasoned and cooked on the stove. $ ~6.00

Cilantro lime basmati rice Cooked the rice then chopped up some cilantro and threw that in followed by fresh lime juice and salt. (Great Value Basmti Rice 2 lb bag: 3.32, 1 bunch of cilantro $.58, lime: free)

Canned sweat peas Green Giant reduced sodium $.88

Simple, quick, easy, and tasty.

Dinner will probably consist of pasta and or frozen chicken tenders :)

We eat low carbohydrate for health reasons. Here is my menu this week:

Mon – Mother’s Day Leftovers
Leftover pulled pork @ $.86/#
Leftover carrots from veggie tray sautéed in butter & chicken broth

Tue
Taco Skillet – 1/2# grass fed beef with taco seasonings and green beans, sliced onions, lots of shredded cabbage; topped with cheese or sour cream

Wed
Whole roast chicken @ $.46/#
baked potatoes

Thursday
Hot tuna – Baked tuna salad topped with swiss cheese, served with low carb crackers & dill pickles

Fri
Leftover roast chicken & broccoli(from Sunday's veggie tray) casserole w/cheese sauce

Sat
Calf liver w/bacon & sautéed onions
Roasted cauliflower

Yesterday was chicken alfredo with broccoli
Today is chicken fajitas
tomorrow we will be ground turkey burgers
wednesday we will be out of town so eating out
Then whole roasted chicken
next day is chicken lentil soup
taco salad
and I think thats as far as our meal plan went for the week.

Lunch--Green gazpacho with corn chips and apple. Sausage pizza (made at the store). Leftovers.

Dinner:
Sun-- Jamabalaya with chicken, shrimp, and sausage
Mon--Sesame and ginger glazed chicken with blanched green beans (June 2016, Cooking Light)
Tues-- Jambalaya leftovers
Weds-- Vietnamese-style salad bowl with ground pork (June 2016, Cooking Light)
Thurs--pesto pasta with yellow and red cherry tomatoes (June 2016, Cooking Light)
Fri--blergh. TBD.

As you can see, we get a lot out of our Cooking Light subscription!

Mmm, you all are making me hungry!!!

- Monday : Market available fish, warm walnut dressing spinach salad (similar to http://www.myrecipes.com/recipe/warm-walnut-spinach-salad) and roasted sweet potatoes.
- Tuesday : Flat roast chicken w/ tiny potatoes & salad (ala http://www.smells-like-home.com/2013/02/flat-roast-chicken-with-tiny-potatoes/)
- Wednesday : We eat at a friend's house this night, they cook
- Thursday : We at at the same friend's house this night, and we'll likely make a compartment meal w/ roasted potatoes, the leftover chicken from Tuesday, and a big green salad.
- Friday : You caught me mid-planning cycle, as we plan meals on Friday and shop Saturday morning. :)

We've been mega slacking on the meal planning lately. I made a couple of pizzas and a big vegetable pot pie yesterday, which will be our lunches for a few days. Cooking plans for the week:

1. Tofu stir fry
2. Fried rice (holding out to try to score some free pineapple from work)
3. One of those vegetarian roast things with lost of roasted potatoes, carrots, and gravy.

That should be pretty much all we need for the week.

My meal prep may sound boring, but here's what's for lunch this week

Boring is fine! My meal planning for breakfast is yogurts, snacks are either fruit, cereal bars (if I'm desperate) and microwave mac and cheese (if I'm really, really desperate).

Oh one other thing I didn't mention - my five week plan gets duplicated before I move on to the next plan. So with the quiche I get the pie crust that comes two per package and just save the second one for five weeks (it's okay if it gets roughed up a bit in the freezer, we just stick the broken dough back on). If I plan well I only make the chili once in a big batch and just defrost it the second time. Five weeks is long enough to avoid the feeling that we just had this and it means I can go three months between having to plan (because ten weeks of planning invariable stretches when we have to make last minute schedule adjustments).

On Sunday I tossed a few pounds of frozen chicken breasts into a slow cooker with a bunch of hot sauces, shredded it and will be eating it for my lunches with vegetables.

During the night I cooked a few pounds of pork loin with red curry, water, vegetables, and some more things to create a stew that will be my dinner Monday through Wednesday. Thursday night I go to a Bible study that has dinner provided, and the weekends I leave open to eat out with friends or splurge if I want to.

I'm going to Chicago on either Saturday or Sunday, so it's hard for me to plan this weekend anyways.

I try to follow the same routine each Sunday, make a bunch of food and eat it. That takes guess work out, and I'm starting to learn to enjoy it.

Risotto Primavera
Pork burgers + fries (ground pork, rosemary and thyme in the patty, top with honey mustard and ... I forget what kind of cheese)
Fajitas
Chicken tikka masala + rice

Linguini with yellow squash and zucchini
Philly cheesesteak sandwiches + fries
Salad - spinach, pear, walnuts, leftover balsamic chicken, raisins
Raspberry balsamic chicken (use raspberry dressing + balsamic vinegar) and vegetable crockpot with rolls

Date night chicken
Black bean enchiladas (make ahead x2)
Goulash with egg noodles
Slow-Cooker Curried Chicken With Ginger and Yogurt

Ground turkey sweet potato skillet
Oven roasted chicken over chopped vegetables, with rolls
Chicken (marinated) alfredo with broccoli
Mongolian Beef

Black bean chili, possibly make cornbread ahead of time
Lasagna roll ups (make ahead, double batch)
Braised chicken and butternut squash with cranberries
Potroast


Lunches (if I'm feeling particularly motivated tomorrow): Make a giant batch of brown rice, chicken, mixed vegetables, white beans. Add salad dressing, toss to coat, then freeze.

Great idea for a thread!  I'm doing the slow carb diet right now, and planning a fair bit of prep cooking tomorrow to stay on track.  I'm going to cook a turkey breast sous vide - will do half of it with herbs, and do the other half with chipotles and cumin.

Yesterday I made a bean salad with white beans, olives, capers, herbs, red onion and celery.  Tonight I made a jicama slaw with a sesame-ginger-almond dressing.  Both of those will be featured in my lunches if DH doesn't eat them all.  Tomorrow I'll probably throw together a lentil salad as well.

Breakfasts will be some cinnamon-apple sausage I found on sale along with a couple eggs and green chile, and a big mug of green soup.

Lunches will probably feature canned tuna along with some of the leftover salads.  Another option I have up my sleeve is cottage cheese with a sweet potato, which is easy for breakfast or lunch if the sweet potato is pre-baked (I don't like to microwave them).

Dinners will likely be big green salads with the turkey, and maybe some  more beans.  Will probably make black pot beans tomorrow as a staple for dinners, and then add on with some sauteed broc, zucchini and bell peppers. 

Later this week I might cook some of the grass fed beef liver languishing in our freezer along with onions and sauteed mushrooms.

End of the week will be braised red cabbage with either salmon or brats if we run out of food.

Humm... this doesn't sound much like a plan, but it's really hard to predict leftovers.  Sometimes, I make what I think is a lot, for intentional leftovers and it all disappears.  Other times, I try to plan for a different meal each day and we end up with a food backlog and I have to change plans to prevent a bunch of food waste.

Pan seared fish with Chinese broccoli
Salad with seeds and an egg
Greens with seeds and sweet potato
Breaded fish, sweet potato and greens
Chili and green beans
Tofu, greens, and acorn squash
Tuna salad on salad
Tofu on salad
Greens, seeds, and squash

Breakfast is a kefir/hempseed/strawberry/superfood smoothie
Evening snack is hummus or miso soup.

Groceries are bought and the fridge is very green

Exciting times around these parts as we are cleaning out the fridge before we go abroad for 2 1/2 weeks.  So much of what I'm making is to optimize what's in the fridge and not waste.  Some stuff will be eaten this week.  Other stuff will be frozen to eat when we get home.  I really like to cut down on food waste.

(1) Lasagna - Frozen.  To use up the last bits of spaghetti sauce with Italian sausage, the 1/2 box of lasagna noodles, and the cottage cheese I got on sale.
(2)  Egg bake.  Gonna use up the eggs I got on sale for .88/dozen and freeze one of these for when we get home.
(3)  Chicken and noodles.  Using the leftover chicken and homemade chicken broth from when I roasted a chicken last week.
(4)  Salads - using the romaine and fresh garden veg we get through our CSA.
(5)  Fruit smoothies - using our gargantuan bag of Costco strawberries, our overripe bananas, and a can of pineapple from the cupboard.
(6)  Grilled pork loin chops (purchased on sale for .99/pound a couple of months ago) and roasted potatoes on the grill.

I make a large soup, a large salad, and a pot of beans each week.

Soup: Broccoli
Salad:  Greek pasta salad from budgetbytes
Beans:  Pinto

Veggies: Using up a windfall of broccoli and the last of the carrots from the garden.  I'm hoping that yellow squash and zucchini are ready this week.

Sunday: fish and rice, carrots and broccoli stem relish
Monday: tacos
Tuesday: baked chicken legs, potatoes
Wednesday: Spaghetti
Thursday: leftovers
Friday: pot luck

Breakfast will be egg tacos with beans
Lunches previously cooked and frozen stew with combos of soup/salad/bean.

Breakfast: smoothies
AM Snack: chard, onion, goat cheese frittata (in the oven right now). From thekitchn (frittata squares for a crowd)
Lunch: salad.  I have green lettuce and spring mix. Likely with goat cheese and the beets that are roasting.  Oh yeah, that reminds me that I need to make salad dressing today.
PM snack: cottage cheese and fruit

Dinners:
Rice and vegetable cheese casserole (for the potluck tonight)
Meatball marinara over polenta
Tofu and vegetables
Fish, roasted potatoes and steamed broccoli
Bean tacos (refried beans from 100 days of real food)

Basically, I plan my meals around the produce box that we get.  I personally try to limit my high-carb foods to 2 servings a day.  Maybe 3.  My husband and kids can eat more.

My meal plans involve a lot of veggies and protein for me.  I try to make a big pot of *something* for my husband to eat for lunch. This week will be the beans/rice/tacos and the rice/veggie casserole.  Will probably get some chicken in there too.  Have a bit in the freezer to cook up.

I also have to work around other things like baseball.

I admire people who can do all their meal plans on Sunday and prep everything, but my fridge isn't big enough to meal prep for 4 people for 5 days.

Not a lot of recipes.  Most of the time my food is super simple.

Breakfasts: peanut butter toast. So I made two loaves of multigrain bread this week.


Lunches: made a big batch of vegetable soup, froze in lunch portions with leftover biscuits


Suppers: breakfast for dinner (see leftover biscuits above), a stupid frozen lasagna we can't even put in the microwave as it turns out(!), hot dogs with leftover scratch baked beans and tater tots, instantpot German bake, chicken fiesta, general tso's chicken with lots of veggies thrown in, leftovers.

breakfast and lunches are typically the same for me out of sheer laziness (especially lunch)

I loveeeee breakfast and pretty much eat the same every morning. 3 eggs w/chopped spinach (or some type of leafy greens), tomatoes, and blue cheese. A piece of fruit (typically a kiwi or blueberries). A 'green' drink (i use an Amazing Grass product). and some coffee. -- on the weekends i may throw in some bacon or sausage along with all of this, or i may just fast through breakfast, but eat this meal for lunch.

lunch is super easy for me....this is also my post-workout meal and pretty much the only meal with complex carbs. i just batch cook some pasta and ground turkey. enough to make 5 lunches. dump on some spag sauce before i leave for work each morning. microwave for a couple of minutes at work after my workout and i'm good to go.

dinners vary...usually lean meats and veges. this week is chicken and sauteed zucchini/onions

snacks: typically cottage cheese, greek yogurt with almond butter mixed in, protein shakes, and nuts.

We did a really good stockpile on the weekend, so I should be able to take a few days off now.

My lunches this week are calzones and Thai curry seitan. Boyfriend has some pesto skillet pasta, biryani, and stir fry. Sometime mid-week I'll whip up some empanadas

We do batch cooking on the weekends (usually three recipes), and then eat some and freeze the rest.  I do most of the cooking so it's easy for me to remember what we've made for the past few weeks:

Week before:
- Dal w Naan (http://www.budgetbytes.com/2010/09/dal-nirvana/)
- Oven roasted chicken and veggies with fresh rosemary
- Spicy thai flavoured barley and vegetable soup


Last week:
- Hummus and veggie pizza
- Butter chicken / Naan

This week:
- Beef gyros from the crock pot with home made tzatziki sauce and fresh veggies

- Pasta with some meat sauce (ground beef, mushrooms, peppers, basil, oregano, shredded carrots, garlic)

Arugula. I've acquired arugula for cheap - but only if I bought 8 bags of it at once for $2.

Also, pesto jars were clearanced to 29 cents and I bought 33 of them because the sell by date is 2018.

And whole grain english muffins were clearanced to 29 cents a package so I got 9 of those and froze some.

And cheese - 1/2 lb blocks of cheese were 11 for $8. I got 33 of those.

Pasta with arugula and pesto sauce.
English muffin pizzas with arugula and pesto sauce and cheese.
Veggie burgers topped with arugula and pesto sauce.
Maybe a cheese omelet with arugula in it.
Possibly a quiche with cheese and arugula.
Burritos with arugula and cheese.

TL;DR: High probability of my husband divorcing me this week.

Ps, if you call it rocket and roquette, you're clearly serving three different greens.
It would make a firey saga, and I used to make some into a pesto type sauce and freeze.

Does anyone else use eMeals? It's $5 a month and they send you daily recipes, shopping lists, coupons, and it's all organized in an app. EXTREMELY handy. They provide multiple meal plans, depending on your dietary needs and preferences, and it saves us the time of putting together shopping lists while greatly reducing our food waste, since we're actually using everything we buy. Might seem like a waste of $5 to some, but for us and our two daughters it's been a godsend.

I realize that sounded like a commercial...

This gave me a good laugh. Sadly, my husband did not share my excitement that I now have a potential backup plan if he leaves me.

Ohhhh!  I'm so happy I found this thread!  As a "condition" of my transitioning to part time, I have agreed to take over meal planning & most of the prep/cooking.  I've always wanted to be a meal planner & I think now I will actually have to become one, mostly because I am not someone who can just look at ingredients & make something decent.  This girl needs a recipe!

My initial approach is going to be to ask my husband & daughter to each pick one meal a week and then I'll fill in the other days. I'm excited to find ideas here and also, hopefully, one day share my very own meal plan. :)

Does anyone else use eMeals? It's $5 a month and they send you daily recipes, shopping lists, coupons, and it's all organized in an app. EXTREMELY handy.
I will second that eMeals is well designed and the app is awesome!  I canceled my service because I wasn't using it, but can see how great it would be once it became part of a routine.

Arugula. I've acquired arugula for cheap - but only if I bought 8 bags of it at once for $2.

Also, pesto jars were clearanced to 29 cents and I bought 33 of them because the sell by date is 2018.

And whole grain english muffins were clearanced to 29 cents a package so I got 9 of those and froze some.

And cheese - 1/2 lb blocks of cheese were 11 for $8. I got 33 of those.

I'm in a northern suburb of Detroit - where we have aldi's that runs good markdowns on occasion, kroger with their regular manager specials, plus a ton of small ethnic "fruit ranches" (stores that are just like the perimeter of a regular supermarket, but without all the processed food aisles).

Friday Not sure I do my shopping on Thursdays

Too many great ideas to count! I like this thread already. Posting to follow.

I made tuna-lentil salad for lunch this week. It's basically this recipe. Two cans of tuna, some green lentils, and a few cups of jasmine rice, mixed together with two tablespoons each of lemon juice and good olive oil. It's super cheap and packed with protein. I made a big batch so it'll last all week.

Dinner this week is chicken breast dusted with Adobo and stir-fried in canola oil to get a crispy crust. I mixed that with two cans of black beans and diced tomatoes, sprinkled it with shredded Mexican cheese and baked everything together like a casserole.

I bought a 7.8 lb pork loin that was the loss-leader on the front of the grocery flyer.

I roasted a third, froze a third and will crock pot the rest.

The roast was low and slow (2.5 hrs) and then 10 mins at 475 for nice color.

Roast pork and corn pudding
Shredded pork (but the low slow roast is to moist for a natural shred)
Pork carnita nachos
Pork sandwich with pepper-jack cheese and horseradish mustard
Home made pork and beans (more roasted tomato than beans, and the beans are cooked with the fat from the loin)
Pork fried rice (w/ brown rice)
Mushroom soup w/ pork
Corn chowder w/ pork & hot sauce
Pork & eggs
Pork roll-up w/ pickle, cheese and a bit of brown mustard

yeah there isnt enough fat in pork loin to shread it thats what butts are for

I've sort of stayed on plan.  At least in terms of breakfasts, and having green soup, beans and turkey as our staples.  I also cooked an acorn squash and sweet potato last night and have been eating them with cottage cheese.

Tonight I cooked some lentils to make a lentil salad, but they came out too overcooked (rare Instant Pot fail).  Fortunately, it's going to cool off and be kind of rainy the next few days, so they're going to be used in a chorizo and lentil soup/stew.  Along with that will be asparagus sauteed with mushrooms and radishes from the garden.  Which reminds me:  I left the radishes down in the garden.

For me, breakfast and lunch are automated at the moment. Breakfast is cold oats, whatever fruit available, walnuts and milk. Lunch is a packed salad with homebaked foccaccia that I always bake huge amounts of and freeze.

Dinner this week was:

Mo: chicken with caper sauce and mashed potato
Tue: pasta with chicken and arrabiata sauce
Wed: mushroom burger with sweet potato wedges and tsatsiki
Thu: leftovers from tuesday
Fri: out at Italian restaurant with my bf with a 50% off gift card
Sat: grilled a whole chicken, potato salad
Sun: vegetable curry, rice, leftovers from saturday

Long weekend in Canada, more time to bulk prep for the week! This weekend I'm making Thai coconut curry, chili, two pizzas, curry seitan, and tofu kung pao. At some point mid-week, I'll make up a batch of tortillas and turn the leftover chili into burritos, but that should be the only type of cooking I need to do after Monday.

Our grocery spending is a little insane his month, so I'm trying to eat down the supplies and buy very little until June.

I've made the bread already, though I think I'll start another loaf to get ahead.


The bread is PB toast for breakfast.



Lunches are leftovers for me (he eats a homemade trail mix). I still have vegetable soup and biscuits in the freezer.


Suppers:
Leftover baked pasta
Burritos with chicken, peppers, and leftover homemade mexi dip for sauce. Probably some rotel too. Need to cook the chicken because I'm out of precooked. There's a pack of thighs in the deep freezer, but I have to get the leftover mexi dip out of the instantpot.
German bake
Breakfast for dinner
Hot dogs if he'll go for it
A curry or general tso's


Need to come up with something to use up cornbread. Maybe hoppin John. Would need to cook more rice, though - just one meals worth of precooked in the freezer, and it's cooked in coconut milk and curry.


Bulk cooking projects today: more bread, chicken, brown rice.

Breakfast all week:  green soup and scrambled eggs with green chile and sausage 4 days, cottage cheese and grapefruit one day
Dinner tonight:  Meatloaf, roasted carrots and braised red cabbage
Lunch tomorrow:  Turkey/veg soup leftover from Friday night
Dinner Monday & Tuesday:  big salad, black bean/ground pork chili
Lunch Tuesday: Hopefully leftover meatloaf
Lunch Wednesday if no leftovers:  avocado, veggies, hummus, can of sardines or kippered herring - some of my cheese & salami stash at work if still hungry
Dinner Wednesday and Thursday: chicken coconut curry with lots of veg over cauliflower rice
Lunch Thursday & Friday:  avocado, baked sweet potato with cottage cheese.
Dinner Friday:  Salmon fillets with red potato salad and saute of whatever veggies are leftover or gleaned from the garden

Saturday (grocery shopping day): Zucchini and parmesan risotto (http://www.food.com/recipe/risotto-with-zucchini-and-parmesan-321781) CURVEBALL: our bulk-purchased shredded parmesan started to mold! We found some black pepper romano we got for entertaining and hadn't used that saved the day. Lol.
Sunday (big-ish hike day): Beef roast (to last all week), garlic bread, basic garden salad (lettuce, peppers, cukes, tomatoes), homemade balsamic vinnaigrette dressing.
Monday: Taco Mac
Tuesday (dance class day): Taco Mac leftovers
Weds: Rice or pasta with mushrooms and kale (+roast)
Thurs: Fancy ramen w/ beef, enoki mushrooms & other veg.
Fri-Mon: Camping food! Actually we'll probably get fast food on the drive up...but camping! :D :D

May well switch around Mon-Thurs meals. Lunches are leftovers. Breakfast is eggs+bread.

We ate seafood out with friends. There were lots of crab legs left over. We took them home, and DH separated the meat from the shells. I made crab and corn soup. I took frozen turkey stock and frozen leftover white wine from Thanksgiving, put them in a pot, added the crab shells, celery and carrot ends, onion skins, and boiled with thyme and basil sprigs from our garden and a couple of garlic cloves. Got a fabulous tasting soup base. I then cooked some onion, celery and carrots until translucent and added them to the broth. Cooked this with 4 diced potatoes. Made a peanut-butter colored roux and added it to the broth to thicken it. Then added cans of corn, the crab, some half-and-half and salt and pepper. Delicious.

I love hearing what other people eat! And the different recipes are pretty inspiring for times I feel in a rut. Here's my plan for the week:

* Sunday: made a big batch of quinoa salad (sun dried and cherry tomatoes, feta, cucumbers, olives, Italian parsley) to take to a bbq and made sure to have extra for the week for lunches.

* Breakfast for the week is the usual smoothies (me); oatmeal with fruit (DS); avocado on toast (DD). One or two days scrambled eggs with spinach, avocado on toast (all)

* Monday: turkey/quinoa meatloaf, green beans, roasted sweet potatoes

* Tuesday: grilled salmon, veggie kabobs, brown rice

* Wednesday: spinach/cheese ravioli with marinara, stir fry of zucchini/peppers/onions

*Thursday: likely will be pizza night with other families from the swim meet. Not too $$ and generally fun

* Friday: salmon burgers? pasta salad? green salad?

Weekend is open at the moment, some morphing plans about a visit to the lake, bbqs, etc.
