Filet Mignon in bulk?

Hey all,

For those of you meat-eaters out there who appreciate a good steak once in a while (or more lol), is $9.99/lb for choice filet mignon a good price? The catch is that you have to buy it by the bag... so like 9lbs worth. That's a lot of meat! Just curious if any of you buy your meat this way and how you go about portioning it out - just cut into the individual 8-12oz portions and vacuum seal individually?

Sounds like a good price to me, the grocery stores around us all run around $19 - $21 per pound.

We typically do 8oz servings 1 or 2 times a month shooting for quality over quantity.

I was thinking the same - that's just a ton of meat though (like 12-13 servings)? But I guess if you vacuum seal individual portions (or maybe two at a time) it could last quite a long time.

Can you get friends/co-workers together to buy what you don't want?  Then you could as you say vacuum pack the portion you want and use at your leisure.  If you were nearby, I'd take a few pounds off your hands.

I buy half a beef every two years.  It's well wrapped in plastic and quality freezer paper.  I've never had a problem with freezer burn in all the years I've been doing this.

Thanks guys, I think we're gonna splurge lol. On that note: how do you guys going about picking the meat when it's whole like this?

I do this with filet mignon.  I have the butcher cut them all into 2" cuts and then when I get home I use a Food Saver vacuum sealer to seal two portions in each pkg (one for me one for my wife) and then they go in my basement chest freezer.  Then I pull one pack out for a steak dinner night....typically a Saturday night date night.  So good.  I do the same with short ribs, Delmonico, t-bone, and ribeye.
