Mustachian Estate Planning/Wills?

So, my wife and I decided that now that we have a child, we should do our due diligence and establish A living will, a will, and a Power of Attorney. Does anyone know and/or have experiences with any services that won't charge an arm and a leg for these documents, but will actually produce them correctly?

you need state specific legal services.

Get a lawyer.  This is not something to cheap out on.

Does your employer (if you have one) offer legal services?
This is how we did ours - it's around $10 a month or so (through ARAG) and you can sign up upon a major life event/change.
A friend/acquaintance of ours is in the ARAG network (whom many of our other friends have gotten their wills/trusts done through; some of whom have paid much more). I've made a couple calls to ARAG for other reasons and feel we've made good use of the services. Considering what it normally costs to retain legal services or a lawyer, this is a huge bargain. Of course, YMMV depending on your employer...
