How does plumbing work?! Magic?? (vent)

I'm currently killing time while my other half goes to Home Depot AGAIN for the third leak under our sink in as many weeks. The problem is that we keep jostling stuff when we're fixing the last leak and the whole thing started with replacing the garbage disposal. It seems like every time we reconnect a pipe there are many utterances of "HOW WAS THIS EVEN WORKING? HOW THE HELL HAVE WE HAD A FUNCTIONAL SINK FOR YEARS?!?" It's giving me many (not so) fond memories of when I replaced the disposal at my last residence - I ended up having to buy some sort of accordion pipe thing to connect two joints that weren't level and the previous pipe job had been done as if they were. I have no idea how that wasn't leaking water constantly for years.

We're looking at redoing our whole kitchen in the not too distant future, full gut job. I'm tempted to make myself a note now that whenever the new sink plumbing goes in, to jostle the pipes at night so I can tell the GC in the morning that it wasn't done right.

Is all plumbing this fucked up/magical until touched?

LOL.

Cast iron sucks.  Great for homes but terrible for connections.  When I did our kitchen, I did all pvc and put plumbers glue on there like it was going out of style.
