Favorite Mustachian recipes
« on: June 21, 2015, 07:15:01 PM »
Since buying and cooking your own groceries is such a good Mustachian habit, I'm surprised I don't see more recipe shares on here.  We're well into summer in my part of the world and I'm feeling pretty bored with our current rotation. My wife is vegan, I'm not, but tend to eat vegan for meals together to make things easier. We also have a toddler who is only semi-picky about food (at least so far).  I do the grocery shopping and meal planning.

On the weekends I'll usually make a couple big pots of things for us to take to work for lunches during the week.  Some meat sauce pasta for me and lentil soup for the wife are pretty common. Dinners range from tuna melts and veggie burgers to stir fry.  Also, since I commute (I know, I know - two working parents and a kid and a commute, I already deserve a face punch) it's great if week night meals can be thrown together in 20 mins or less.

Also, since it's summer, I have not been enjoying being inside cooking as much as usual. Time to get a cheap but reliable grill maybe? Or find some great, filling salad recipes?

Open to any and all suggestions for quick week night meals, make-ahead lunches/1-pot meals, etc.  Thanks!

Here's a very hearty side dish:

Ingredients:
1 14.5-ounce can white beans (rinsed)
2 Tbsp chopped red onion (I tend to use a bit more)
A squeeze of lemon juice (I tend to use a bit more)
2 teaspoons cider vinegar (don't sub red or white)
1 Tbsp extra virgin olive oil
1/2 teaspoon dry herbs de provence
Salt and freshly ground pepper to taste
~2 garlic cloves (we use 3 sometimes but that's probably more than most people want)

Adapted from: http://www.simplyrecipes.com/recipes/quick_and_easy_white_bean_salad/

Pour the lemon juice over the onions and let it sit for a few minutes to help them mellow a bit.  Combine the rest of the ingredients.  It's good sitting around a day or two, but go lightly on the garlic then, as it'll "bloom".

I thought there was collection of recipes somewhere on this site. I can't seem to find it. Anyone know where it is?
