You could gift then to someone else when an appropriate occasion arises.

You could sell them to a site like cardpool or ABC gift cards, but it sounds like you're not going to like that either.

I will say that no rational person would pay face value for your cards.

It would be hard to get 100% cash value for almost any gift card. You can try sites like giftcardgranny that will buy it directly from you. A quick check shows that an Outback GC will get you 75% of the value in cash.

Has anyone actually used one of those sites? I looked briefly at one point but then couldn't tell how legit any given site was. I'd be more inclined to do that than Craigslist because I wouldn't need to chase around to meet up with someone.

I've sold literally thousands of dollars of gift cards to ABC gift cards for profit without issue.
I've sold several hundred to Cardpool without issue.

By the way gift card granny doesn't buy or sell gift cards. It's only an aggregator site that compares rates among different resellers. Gift card wiki is much better.

How are you selling them for profit?  Are people paying more than the value of the card?

If they were a gift (free) to start with getting any amount for them (from $1 to face value+) is a profit.  That's my take on it.

I buy eBay gift cards at a discount (whether with Amex offers, eBay sales, or 5% cash back with the Chase Ink). I then wait for sales of gift cards to other places (such as gas stations) on eBay. I buy those with my discounted eBay gift cards, and sell for profit.
