To clarify...

You have a GFCI plugged into a SmartThing plugged into another GFCI?

If this is the case, that's one GFCI of overkill. The GFCI should only need to be somewhere "upstream" of all the plugs on the circuit (a lot of times, a GFCI is the first outlet in the circuit, and all the other outlets are wired off of the GFCI-- which makes ALL the outlets GFCI protected).

Technically, modifying the pool cord can void the UL listing (or equivilent) potentially increasing your liability if something goes wrong (as well as voiding any warranty). Electrically it should be fine wired as you describe; however, weatherproofing your modification may be difficult.
