do frozen cooked pie slices taste okay defrosted
« on: August 07, 2020, 03:07:54 PM »
I can't ask anyone in real life, because none of them bake.........If I make a pie, blueberry for example, cook it, and then freeze the individual slices, will they be okay when defrosted 2 weeks later.   I want an 1/8 of a pie.   Don't want DH to eat the rest in a week "so it doesn't go bad".   In these times of Covid, I am hesitant to give some to my elderly neighbor and I can't give any to my mother in her long term care residence.    I remember my mother freezing unbaked pies to have them in the freezer for unexpected company, but never fully cooked pies.   I suppose I could purchase some small pie plates, but I am loathe to have more bake-ware than necessary.

Has anyone had good success with this?

I've frozen pies in slices and while they wouldn't be mistaken for freshly baked, they're still perfectly edible.  The texture changes a bit and the flavour is less pronounced, but throw some ice cream on it and you'll still enjoy it.  Just be sure to tuck something like plastic wrap around it to reduce the quantity of ice crystals that form.

I freeze absolutely everything.  I have frozen baked pies in individual servings (right after cooling, I don't let them sit around), and I think they taste great when defrosted.

ice cream is my kryptonite.....can't have it in the house......it evaporates faster than the pie!

I've frozen apple and pumpkin. The crust might get a little gummy, but overall it worked quite well. As with most things I would freeze in portion sizes on a cookie sheet and then transfer to freezer back. If you plan to wait a long time before eating you could wrap in tinfoil for some extra protection.

Being a single person, who likes to bake, I freeze individual portions of desserts all the time.  I wrap each piece as tightly as possible in plastic wrap and place the wrapped slices in a freezer ziplock bag.  Works great.  Here are a few of pointers:
1. remove from freezer about 20 to 30 minutes before eating.  It can be warmed in the microwave.
2. As Teran pointed out, the bottom crust can be a bit soggy.  Be sure it is well baked before freezing.
3. If the bottom crust does seem soggy, try warming the thawed pie by placing in a skillet on the stove top over low heat.  You may want to start with the lid on to warm the pie all the way through, the remove cover and turn up the heat a little to dry out the bottom crust.

Refrigerator pies freeze well too.  I have key lime pie in the freezer now! (yum)  Meringue pies are different.  Set the slice of pie on a square of plastic wrap and fold the wrap up to protect the cut sides, but not over the top.  Set the prepared slices on a baking sheet and place in the freezer for a couple of hours or until frozen.  then place the frozen slices into a plastic container that won't squish the meringue and return to freezer.  thaw at room temp for 30 min or so.

I can relate to this mood so much...
