I recently lived in Cap Hill for about 3 months, and it was (mostly) great. There are plenty of good groceries in Cap Hill area - There's a large QFC, a Trader Joe's and the Central Co-op (my favorite). I lived just around the corner from the library a block off Broadway and there is lots of excellent food in walking distance (Annapurna Cafe & Kedai Makan are my favorites!), Vivace coffee, bars, cannabis, and other shopping if you need it. There are some big parks - Volunteer Park is excellent and Cal Anderson at least provides some green. Depending on where you live, it definitely is sketchy at night, mostly the closer you are to the downtown side and Broadway. I would only walk my dog less than a block away after dark. But it's mostly petty crime, some muggings, but not so much violent gun crime.
If Covid-like viruses are going to continue to be an issue, I'd look for a place that has some kind of balcony or other outdoor area because there just isn't a ton of that around depending on where exactly you live (besides the previously mentioned parks). Also keep in mind that August-September has become wildfire season and Seattle has been hit with major smoke keeping people mostly indoors when it gets real bad, but that's pretty much most of the west coast these days.
All that said, I love Seattle and think it's a great place to spend some time.

I don't generally go out at night, which is probably why I don't mind living in a sketchy area. I don't drink, smoke pot, or shop much so don't frequent bars or shops, but I like being around hustle and bustle.

I do love a good park to walk in, but am happy to just walk along city streets as well.

I won't have much time for anything really. Between the program and keeping myself fed, I doubt I'll have much energy.

I love having a balcony in a busy place though, especially for a long day of studying where I can feel part of the city energy without actually having to be in it.

The only supermarket in downtown Seattle closed recently. There's still Target and Pike Place Market so you could do okay between those two if you had to.

Capitol Hill is a different story. There's a ton of residents there, a few major supermarkets, and no sign of either changing anytime soon.

There is going to be a PCC (local crunchy granola co-op grocery store -- maybe a bit less expensive than Whole Foods but more than other local chains) in the Rainier Square redevelopment, smack dab in the center of downtown.

Good to know about the PCC!

There’s also a brand-spankin’ new H MART (asian supermarket) within a couple blocks of Pike Place (downtown). It’s roughly the size of the defunct IGA Kress Cyclone referred to. I’m pretty sure you wouldn’t starve ;-).

(FWIW, I live downtown and regularly walk to the Broadway QFC, so that’s an option, too).

There is a Safeway at the bottom of Queen Anne if you don't feel like going up to the Broadway QFC too. Good prices. And another QFC on Mercer by the Gates foundation building. Both easy access from downtown, it's as flat as you can hope in this city.

Yep, Denny and Westlake. But much pricier, and deep in Bezosland. That store is a circus at 5pm when SLU empties.

Oh man, that Whole Foods. I spent about a year working in the office building across the street from it. Never bought any food there. My wife messaged me one afternoon that she had a headache and wanted me to pick up some Tylenol or something on my way home. I agreed, and figured that the grocer right next to my workplace might be a convenient place to accomplish that task. Wrong! I went in and discovered aisles full of vitamins and homeopathic remedies, but nothing scientifically proven to relieve minor headaches. Not "natural" enough or something? Lesson learned.

Yes!

Most are Asian -- high concentration in the International District, which is just SE of downtown and easy to get to by bus or streetcar.  The Asian places have different management styles.  Uwajimaya is the high end one, Japanese owned and much more expensive but excellent quality -- seafood in particular.   They carry everything but will be 10-20% higher cost on non-sale items.  Viet Wah is probably the next largest one -- Vietnamese owned so good for your SE-Asian type stuff, but they have a lot of the staples and spices/sauces you need for other types of regional cooking.  There are a couple of smaller places on the corner of 23rd and Jackson that are Chinese run -- I haven't been to those in nearly 20 years, though.  There are also some excellent bakeries and specialized tofu places.

Indian places are easier to find than they used to be -- I stopped into one near me (very north edge of the city) yesterday to stock up on spices and red lentils.  There is also an Ethiopian store I drive past regularly (large Ethiopian community in my part of town due to presence of their religious establishments).  I don't cook as much Latin American stuff, but there are probably places scattered around -- we have some pretty good taco trucks, too.

Basically Seattle has become much more diverse over the last 20-30 years so you can probably find a local source for most types of food, but you may have to order on line or take transit/a rideshare service to get there.
